How to Design a Menu That Actually Sells

Most restaurant owners think of their menu as a list. It's actually a sales tool, and small changes to it measurably change what people order and how much they spend.

Drop the currency symbol

Prices written as "12" instead of "$12.00" get ordered more often than prices with a dollar sign attached. The symbol subconsciously reminds people they're spending money. This is one of the best-documented findings in menu psychology research, and it costs nothing to implement.

Use the "anchor" effect

Put one clearly expensive item near the top of a category - even if almost nobody orders it. It resets what feels "reasonable" for everything below it. A $34 steak makes an $18 pasta look like a good deal, even though $18 pasta is expensive on its own.

Highlight 2-3 items, not everything

Boxes, icons, or a slightly different font pull the eye - but only if used sparingly. Highlight your best-margin dishes, not just your favorites. If everything is highlighted, nothing is.

Group by what people want, not your kitchen's org chart

"Starters / Mains / Desserts" is fine, but customers often think in occasions: "Quick bite," "Sharing," "For the table." If you run a cafe or bar, try grouping by mood or moment instead of course - it can shorten decision time and reduce order anxiety, especially for groups.

Cut the item count

A menu with 30 items doesn't look generous - it looks like decision fatigue. Restaurants that trim to their 15-20 best sellers often see faster ordering and less food waste, since a smaller menu is easier to execute consistently.
